Madam Paleta flavor infused tequila is 100% blue agave, which means that our tequila base is top-grade, authentic blue agave that is grown in Los Altos de Jalisco en México.
It takes the blue agave 6-8 years to reach the perfect level of maturation. Then, the agave is hand-cut down to the hearts, also known as piñas.
The agave hearts need to be cooked down to convert the starches into fermentable sugars.
The agave hearts are stuffed into a masonry ovens to evoke more traditional and complex flavors. The cooking process can last up to two days. The extracted juices through milling are called "aguamiel."
The fermentation process for the aguamiel starts with proprietary yeasts, which creates heat and bring the alcohol percentage to around 6%. Then the fermentation process continues with a double-distilled in stainless steel containers. Using heat this process refines the alcohol through a liquid to steam to cooled liquid system.
Maceration (infusion) with Madam Paleta's natural flavors takes 24 hours, during which the liquid is stirred and mixed to create perfectly balanced flavor.
Once the liquid is ready, the bottle are perfectly filled on a small assembly line. The filled bottles are then hand-labeled by a hard-working team of women.
