Madam Paleta Flavor Infused Tequila is made from 100% Blue Agave, meaning our tequila base is premium, authentic Blue Agave grown in Los Altos de Jalisco, Mexico.
The blue agave takes 6-8 years to fully mature, after which it's hand-cut down to its hearts, known as piñas.​
The agave hearts are then cooked to convert their starches into fermentable sugars.​
The agave hearts are placed in masonry ovens to develop traditional, complex flavors, with the cooking process lasting up to two days. The extracted juices, known as "mosto," are obtained through milling.​
Fermentation of the mosto begins with proprietary yeasts, generating heat and raising the alcohol content to about 6%. The process continues with double distillation in stainless steel containers, where heat refines the alcohol through a cycle of liquid to steam and back to cooled liquid.​
Maceration (infusion) with Madam Paleta's natural flavors takes 72 hours, during which the liquid is stirred and mixed to create perfectly balanced flavors.
Once the liquid is ready, the bottle are perfectly filled on a small assembly line. The filled bottles are then hand-labeled by a hard-working team of women.
